Apricot & Almond Strawberry Bites
Ingredients:
- 200g South Cape Apricot & Almond Cream Cheese
- 2 tablespoons icing sugar mixture
- 12 large strawberries
- 100g milk cooking chocolate, melted
Method:
Place South Cape Apricot and Almond Cream Cheese and icing sugar mixture in a medium bowl. Beat with an electric mixture until smooth and fluffy.
Spoon cheese mixture into a medium snap-lock bag, squeeze into one corner, twist bag and snip tip.
Using a small sharp knife, open up strawberries by cutting in half lengthways towards the stem, without cutting all the way through. Pipe cheese mixture into split strawberries. Place on a tray lined with baking paper. Cover loosely with plastic wrap and chill for up to 6 hours.
To serve, spoon melted chocolate into a separate small snap-lock bag, squeeze into one corner, twist bag and snip tip. Pipe chocolate over strawberries and allow to set before serving.
