Spanish Tortilla

Spanish tortilla
Ingredients:
  • 500g potatoes, peeled, cut into 3cm cubes
  • 1 tbsp olive oil
  • 1 large brown onion, finely chopped
  • 2 chorizo, chopped
  • 1 red capsicum, seeded, chopped
  • 1 cup grated South Cape Gouda Cheese
  • 8 eggs
  • Salt and pepper
  • 1 bunch rocket, trimmed
Method:

Put potato in a microwave bowl with 1 tbsp of water. Cover and cook on HIGH/100% for 4-5 minutes or until potato is just tender. Drain.Heat oil in a large heavy-based deep non-stick frying pan. Add onion and chorizo. Cook, stirring often, for 4 minutes or until soft and chorizo is golden. Add potato and capsicum and cook, stirring often, for 2 minutes or until tender. Preheat grill on high heat. Combine South Cape Gouda Cheese, eggs and salt and pepper in a large jug. Pour over tortilla mixture. Cook over a low heat until mixture is just set. Put pan under grill. Cook for 4-5 minutes or until tortilla is set and golden.Cut into wedges. Serve with rocket leaves.
