Cheese Appetisers
Heading:
- 12 slices large-size sandwich bread
- 1 tbsp South Cape Quince Paste
- 80g South Cape Blue Cheese, crumbled
- 1 pink lady or Granny Smith apple, quartered, cored, thinly sliced
- 100g South Cape Edam Cheese, grated
- 3 gherkins, finely chopped
- 120g South Cape Goat's Fetta Cheese, crumbled
- ¹⁄³ cup dried apricots, roughly chopped
- ¼ cup almonds, roughly chopped
- ¼ cup mint leaves
Method:
Spread 2 bread slices with quince paste. Top each with South Cape Blue Cheese, apple and a bread slice.
Cover 2 bread slices with South Cape Edam. Sprinkle over gherkins. Top each with a bread slice.
Sprinkle fetta, apricots, almonds and mint on 2 bread slices. Top with remaining 2 slices.
Trim crusts and quarter sandwiches. Layer 2 different quarters and secure with a toothpick.
