Cheese Appetisers

Cheese appetisers
Heading:
  • 12 slices large-size sandwich bread
  • 1 tbsp South Cape Quince Paste
  • 80g South Cape Blue Cheese, crumbled
  • 1 pink lady or Granny Smith apple, quartered, cored, thinly sliced
  • 100g South Cape Edam Cheese, grated
  • 3 gherkins, finely chopped
  • 120g South Cape Goat's Fetta Cheese, crumbled
  • ¹⁄³ cup dried apricots, roughly chopped
  • ¼ cup almonds, roughly chopped
  • ¼ cup mint leaves
Method:

Spread 2 bread slices with quince paste. Top each with South Cape Blue Cheese, apple and a bread slice.
Cover 2 bread slices with South Cape Edam. Sprinkle over gherkins. Top each with a bread slice.
Sprinkle fetta, apricots, almonds and mint on 2 bread slices. Top with remaining 2 slices.
Trim crusts and quarter sandwiches. Layer 2 different quarters and secure with a toothpick.
