Spiced Gouda & Vegetable Kebabs

Ingredients:


  • 225g South Cape Spiced Gouda, cut into 16 cubes
  • ½ Ciabatta loaf with sun-dried tomatoes or olives cut into cubes
  • 3 tbsp olive oil
  • 16 cherry tomatoes
  • 1 red pepper, deseeded and cut into chunks
  • 1 green pepper, deseeded and cut into chunks
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and freshly ground black pepper
  • Watercress or rocket to serve

Method:

Heat the olive oil in a heavy pan and fry the Ciabatta cubes until golden on both sides. Remove from the pan and set aside. Heat a grill pan and lightly char the red and green peppers on both sides.

Thread the cubes of South Cape Spiced Gouda onto 8 wooden kebab sticks with the tomatoes and peppers. Mix together the olive oil, lemon juice and salt and pour over the watercresss or rocket.

Serve the kebabs on the dressed salad and with the Ciabatta croutons.

Handy note:

South Cape Spiced Gouda can be substituted for plain Gouda. Alternatively make half of the kebabs with Spiced Gouda and the other half with plain.
