Double Gloucester Cheddar Muffins
Ingredients:
- 50g South Cape Double Gloucester, grated
- 50g South Cape Vintage Cheddar grated
- 250g plain flour
- 1 level tbsp baking powder
- ½ tspn salt
- 2 level tbsp chopped fresh chives
- 1 large ripe tomato chopped
- 1 medium egg
- 240ml milk
- 1 tbsp vegetable oil
Method:
In a large mixing bowl, mix together 3/4 of the grated South Cape Double Gloucester and South Cape Vintage Cheddar. The other 1/4 of the cheese will be added at the last minute. On top of this, sift the flour, baking powder and salt. Stir all together whilst adding the tomato and the chives.
Beat together the egg, milk and vegetable oil in a separate bowl. Add to the dry ingredients, stirring until just combined. Do not to overmix - the batter should be quite lumpy.
Spoon the mixture into a well greased muffin tray, then sprinkle the reserved cheese on top. Bake at 180 C for 20 - 25 minutes or until light golden brown. Cool slightly and serve while warm.
Handy Note:
For any leftover muffins, a few seconds in the microwave will re-heat them perfectly.
For a delectable alternative, South Cape Blue cheese can be substituted in the muffin mix and served with a dish of quince jelly.
