Roast Lamb with Fetta Stuffing
Ingredients:
  • 1 1.5kg boned leg of lamb
  • 2 tbsps chopped fresh dill
  • 1/4 cup flat parsley leaves
  • 100g South Cape Garlic Fetta, coarsely crumbled 
  • Pepper to taste
Method:

Lay the lamb on chopping board and spread the herbs and South Cape Garlic Fetta over the cut surface. Add pepper to taste. Carefully roll meat and secure tightly with string or metal skewers.

Place meat in roasting pan and cook in a preheated 190°C oven for approximately 1 and 1/2 hours. If serving hot, allow meat to rest for 10 minutes before slicing, otherwise cool completely then slice. Serve with green beans or peas and garlic mashed potato.

Serves 6-8.
