Mediterranean Beef Salad
Ingredients:
- 4 Eye fillet steaks
- ½ punnet cherry tomatoes, halved
- 100g South Cape Basil Pesto Fetta, sliced
- ½ small Spanish onion, finely sliced
- ⅓ cup Kalamata olives, pitted, quartered
- ½ bunch flat leaf parsley, chopped
- Rocket leaves
- Olive oil
- Balsamic vinegar
- Salt, pepper
Method:
Season steaks and pan fry or barbecue to your liking, set aside to rest.
Put all salad ingredients in a large bowl, dress with olive oil and a little balsamic vinegar. Season to taste.
Serve salad and top with slices of steak and garnish with some additional chopped parsley.
