Blue Cheese, Pumpkin & Leek Frittata

Ingredients:

  • 300g Jap Pumpkin, sliced
  • 1 leek, roughly chopped
  • 1 zucchini, sliced lengthways
  • 100g South Cape Blue Cheese, crumbled
  • 7 eggs
  • 2 Tbsp chopped dill
  • Salt & Pepper

Method:

Pre heat oven to 180°C, roast the pumpkin until soft. Sauté the leek in a fry pan over medium heat until softened. Transfer to a bowl. Cook the zucchini for a minute on each side.

Layer the leek, pumpkin, zucchini, South Cape Blue Cheese and dill in an oven proof fry pan.
Beat eggs lightly in a bowl, season with salt and pepper. Pour eggs over the ingredients, cook gently for approx. 20 mins. Frittata can be finished off in the oven.

Serving Suggestion: Serve with a fresh crisp salad
