Goat's Cheese & Beetroot Salad

Goats Cheese & Beetroot Salad
Ingredients:
  • 450g can whole baby beets, drained and chopped in quarters
  • 1 bag of rocket leaves
  • 50g chopped walnuts
  • A red onion, thinly sliced
  • 120g South Cape Goat's Cheese, coarsely crumbled
  • 2 tbsps olive oil
  • 2 tbsps red wine vinegar
  • Salt & pepper to taste
Method:

Place beets, rocket, walnuts, onion in a bowl. Whisk together oil and vinegar and pour over salad. Add salt and pepper and toss to combine.

Top with Goat's cheese and gently fold through.

Handy Tip:

South Cape Goat's Cheese can be substituted for the Herb & Garlic variant.
