Goat's Cheese & Beetroot Salad
Ingredients:
- 450g can whole baby beets, drained and chopped in quarters
- 1 bag of rocket leaves
- 50g chopped walnuts
- A red onion, thinly sliced
- 120g South Cape Goat's Cheese, coarsely crumbled
- 2 tbsps olive oil
- 2 tbsps red wine vinegar
- Salt & pepper to taste
Method:
Place beets, rocket, walnuts, onion in a bowl. Whisk together oil and vinegar and pour over salad. Add salt and pepper and toss to combine.
Top with Goat's cheese and gently fold through.
Handy Tip:
South Cape Goat's Cheese can be substituted for the Herb & Garlic variant.
