Grana Padano & Vegetable Frittata
Ingredients:
- 1 brown onion, chopped
- Tbsp olive oil
- 10 eggs
- 150gms South Cape Grana Padano cheese, grated
- small red pepper, diced
- cup corn kernels (fresh or frozen can be used)
- 10 cherry tomatoes, halved
- cup baby spinach leaves
- pepper to taste
Method:
Pre heat the oven to 180 degrees. Heat the oil over medium heat in a 20 cm diameter frying pan, and sauté the onions until soft.
Whisk eggs in a bowl, stir in 100g South Cape Grana Padano, all of then vegetables and then season with salt and pepper.
Pour the egg mixture on top of onions, stir gently then allow to cook until just beginning to set at the edges. Transfer to the oven and allow to cook until almost set, about 15 minutes.
Sprinkle remaining cheese on top of frittata and return to the oven until completely set, about another 5 minutes.
Run a spatula around sides of frittata & slip onto a board to cut & serve.
Serves 4-6.
