Racks of Lamb with Garlic Fetta Crust
Ingredients:
- 100g South Cape Garlic Fetta, crumbled
- 1/2 tsp finely grated lemon rind
- 1 tbsp dried or 1 tablespoon chopped fresh oregano leaves
- 4 very lean rib racks of lamb
- Drizzle of honey
- Freshly ground black pepper to taste
- 1 punnet of cherry tomatoes on the vine, snipped into 4 sections
Method:
Mash the South Cape Garlic Fetta, lemon rind and oregano with a fork until it resembles a thick paste.
Divide the fetta mixture into 4 and press onto each rack, pressing down with fingers or a spatula to make it stick.
Place on a baking tray and bake in a preheated 200°C oven for 15-20 minutes, or until cooked to desired taste adding tomatoes to the oven for the last 10 minutes of cooking.
For extra glaze and colour, drizzle the racks with a little honey during last 5 minutes of cooking. Add a little coarsely ground black pepper and an extra sprinkling of oregano leaves to garnish. Serve with mashed potato or cous cous and a green salad.
