Quince & Cheddar Tartlets

Ingredients:
  • 2 sheets butter puff pastry
  • 1 medium onion, chopped
  • 1 tsp chopped thyme
  • 3 tsp South Cape Quince Paste
  • 60g South Cape Smooth and Tasty Cheddar, grated
  • 2 eggs
  • 1/2 cup cream
  • 1 Tbs chopped chives

Method:

Cut 6 circles of pastry to fit medium muffin tin. Sauté some onion until soft and let cool.

In each of the pasty cases place some onion first, South Cape grated Smooth and Tasty Cheddar and then ½ tsp of South Cape Quince Paste.

Whisk the eggs and cream together and season with salt and pepper. Pour the egg mix into the tarts, gently tapping the muffin tin on the workbench to allow the egg mix to reach the bottom of the pastry cases.

Scatter the chopped chives over the tarts and then bake in a moderate oven until pastry is fully cooked through. 

Handy Note:

South Cape Smooth and Tasty Cheddar can be substituted for South Cape Tasty Matured or South Cape Vintage cheddar if a stronger flavour is desired.
