Hard or 'hard grating' cheeses are generally matured for at least six months, resulting in very firm cheeses with low moisture content. Hard cheeses have a long shelf life and are very concentrated, often sharp and tangy, in flavour. Their distinctive flavours intensify the longer the cheese is aged. Hard cheeses are most commonly grated or shaved in recipes but can also be served as a table cheese.
