With a soft, textured centre and luscious stringy stretch, Haloumi and Mozzarella-style cheeses are a world-wide family favourite.  Fresh, very moist styles, like Bocconcini, are soft and juicy and are perfect eaten fresh, whereas firmer Mozzarellas are ideal to slice or grate for melting.  Whilst Haloumi is wonderful for pan-frying or grilling as it forms a crisp crust and delicious chewy centre, ideal for an impromptu fresh salad.
