Fetta Spaghetti

A quick as a flash pasta dish that uses marinated fetta, oil and all, for flavour and creaminess.
   25 min Serves 4

Ingredients

500g spaghetti
350g South Cape Marinated Fetta
4 cloves garlic, crushed
1 punnet cherry tomatoes
1 bunch basil leaves
sea salt and freshly ground black pepper, to taste

 

Method

  1. Boil spaghetti in a pot of salted water until al dente, drain, reserving 2 cups of pasta water.
  2. Heat the oil from the South Cape Marinated Fetta in the pot and sauté garlic and tomatoes for 5 minutes, until tomatoes burst.
  3. Add fetta, pasta water and spaghetti and cook, tossing for 5 minutes until a creamy sauce is formed.
  4. Stir in basil leaves, reserving some for garnish, and season to taste.
  5. Serve sprinkled with pepper and garnished with basil.
