Baked Chilli Fetta

Warm creamy fetta baked over balsamic onions and capsicum with a touch of spice is perfect for bread dipping.
   25 min Serves 4

Ingredients

extra virgin olive oil
1 red onion, thinly sliced
1 small red capsicum, cut into strips 1/4 cup balsamic vinegar
2 tablespoons brown sugar
200g South Cape Danish Style Fetta chilli flakes, for sprinkling coriander or parsley, for garnish toasted bread, for serving

 

Method

  1. Heat 2 tablespoons oil in an ovenproof skillet and sauté onion and capsicum for 5 minutes until softened.
  2. Add vinegar and brown sugar and simmer 2 minutes.
  3. Cut South Cape Danish Style Fetta in half horizontally and place in the centre of the skillet.  
  4. Drizzle with oil and sprinkle with chilli.
  5. Bake at 200°C for 15 minutes until fetta is soft.  
  6. Sprinkle with coriander and serve with toasted bread.
